If Your Runner Beans Are Stringy Don’t Despair – Turn them into Yummy Runner Bean Soup!

At this time in the harvesting calendar runner beans can be past their best and it is certainly the case on our allotment at the moment.  But having taken the time to grow them and then pick them, I was determined to find a recipe that would turn stringy runner beans into something delicious. 

I am delighted with the results and thought I would share it with you.  It has a yummy subtle flavour, and the onions and mint along with a dash of sour cream make a lovely combination of flavours.

Ingredients
2 lb runner beans
3 onions
1 large potato
vegetable stock
1/2 pint milk
sour cream
handful of fresh mint
dash of olive oil

Method

  • Chop the onions and in a large saucepan fry them in some olive oil until they turn clear
  • Wash the runner beans and remove the stringy edges with a potato peeler
  • Chop the beans and then add the beans and their seed pods to the onions
  • Peel the potato, chop into chunks and add to the saucepan
  • Add a sprig of mint torn into small pieces
  • Cook gently for a few minutes
  • Add the vegetable stock – use enough to cover the vegetables
  • Simmer gently for around 20 minutes
  • During the cooking add the milk
  • When all the vegetables are cooked add the remaining mint and then blend in a food processor
  • Add more vegetable stock or milk if the soup is too thick
  • Reheat the soup if necessary and add a dollop of sour cream to each bowl along with some croutons and a sprinkling of freshly chopped mint

The 'Log Store' now available from The Recycle Works

This compact Wood Storage Box is ideal for keeping logs either inside or outdoors. With good air circulation it will protect logs, keeping them dry and ready to put on the log burner.

Easy to assemble, no nails, no screws no holes to dig.

Log Stores are manufactured from wood that comes from F.S.C. certificated Northern European Forests. They have been treated with a non-toxic preservative. By utilising the posts on any side of the Log Store and sliding new panels into them you can double, treble the size of your bin in just a few minutes by adding a Wooden Module

We always have competitions running for families and schools, with some great seasonal prizes up for grabs. 

In August, Sylvia in her Recycleworks brief asked for your gardening photos.  She had some great entries and the winning shot was of three year old Sam Thomason with his first harvest, grown with the help of mum Emma.

Recipe For Picalilly

This recipe is from ‘Bulletin 21’ the preservation book from the Ministry of Agriculture and Fisheries & mentioned last week on our newsletter ‘Sylvia’s Briefs. It is very down to earth!

Ingredients:

  • 1½ Kg Marrow
  • 500gm Cauliflower florets
  • 400 gm Beans
  • 250 gm Onions
  • ½ large Cucumber
  • 1.5 lt Vinegar
  • 250 – 350 gm Sugar (to taste)
  • 50 gm Mustard
  • 50 gm Ground ginger
  • 25 gm Flour
  • 75 gm Turmeric
  • 400 gm Salt

Cut the vegetables into small pieces, sprinkle with salt and leave for 24 hours. Mix a little vinegar with the spices and flour. Boil the drained vegetables in the sugar and the vinegar for 15 minutes. Stir in the spices and boil for another 3 minutes. Bottle and store.

Believe it or not, used cooking oil can now be turned in to electricity!

Certain councils throughout the UK are offering trial collections of cooking oil so it can be turned into a biofuel to produce green electricity.

Every year, tens of thousands of litres of used cooking oil are poured down the drain costing millions of pounds to clean up. The cooking oil that’s collected can be refined into a biofuel – one litre of  biofuel generates enough clean electricity to make 240 cups of tea, whislt one tonne (1,111 one litre bottles of cooking oil) provide enough to power the aveage home for a year.
